The streets of Oaxaca City feel serene at 5:00 p.m. in a Tuesday evening, so it's unsurprising that my husband and I are the only ones with reservations for a mezcal tasting at Mezcaloteca. The seven-year old mezcaleria is run by Sylvia Philion and partner Marco Ochoa, who arrive with a rambunctious toddler in tow. As they get settled, we take the opportunity to soak up the reverent atmosphere. With a bookshelf-like back bar and educational literature set up at every station, the name rings true: Mezcaloteca feels more like a cozy library than a bar, and as we quickly discover, Philion makes for the perfect mezcal historian.
