This book is about rice and the origins of its cultivation in the Americas. It is, in fact, a narrative of the Atlantic slave trade whose telling assists in the recovery of a significant African contribution to the agricultural history of the Americas. As the following pages reveal, this contribution was to prove considerably more than the standard view of slaves as a source of unskilled labor. Through their cultivation of rice, slaves reinforced an African identity by adapting a favored dietary staple of West Africa to tropical and subtropical America. But even more critically, the knowledge of how to grow rice provided the enslaved with the ability to negotiate the terms of their bondage while providing a subsistence staple to maroons throughout Latin America.
