Initially vermouth was made as a way to improve wine by masking it with herbs and floral ingredients. (This is back in the 18th century) Nowadays, we don't need to improve wine because our methods of production have increased and overall quality is good. That said, vermouth has stuck around because it is complex and delicious on its own.
